Baked Whole Snapper

Ingredients

  • 1 whole snapper, 46cm long / 2.5kg
  • Oil
  • Lemon
  • White wine
  • Salt and freshly ground black pepper

Method

Wash and scale the fish. Place the fish upright on a sheet of oiled foil, formed into a tray, with its body curved and its fins used to prop it up. Brush it with oil and sprinkle lemon juice all over it. Splash with wine and season with salt and pepper (a little fresh mint and garlic tucked into the cavity adds extra flavour to the fish). Cook it on the the barbecue with the lid on, for 40-50 minutes. Splash more wine over the fish occasionally and drink some too! If desired, during the last 15 minutes of cooking time, 506 green gum leaves may be added to the coals on each side to add smoke flavour. Serve the snapper hot or cold, with tartare sauce and salad.
