Coconut Prawns

Serves: 3-4

Ingredients

12 to 14 medium green prawns (shell on)

1 large coconut

1 Pinch of salt.

1/4 of a lime or lemon to squeeze.

Guide,

small - medium sized prawns will take 3 - 4 minutes.

large prawns will take 5 - 8 minutes.

X Large prawns  7 - 8 minutes.  

Cut the coconut to get the water out.  
Fill a saucepan with the coconut water and add 1 pinch of sea salt, squeeze a quarter of a lime or lemon  
Bring the coconut water to the boil and add the prawns. 
Reduce the heat, cover the pan and simmer the prawns for 3 - 6 minutes, depending on the size.

Start counting once the water has begun to boil again.

 
The prawns will be cooked when they float to the top and the flesh has turned white or opaque throughout. Cut one in half to check (good reason to try one?) 
Remove the prawns from the heat immediately and run them under cold water for a few seconds to stop the cooking process.

Cut the top off the coconut.(as the picture shows) 
Once the prawns have cooled they will be ready to place in the coconut for presentation.
