Lemongrass Prawn Skewers

Preparation & Cooking Time: 10 minutes + marinating time, 2-4 minutes cooking
Serves: 4

Ingredients

12 King Prawns (Shelled and tails left on)

4 Sticks of Lemongrass

Marinade

  • 1 Cup olive oil
  • 2 birds eye chillies, seeded and finely chopped
  • 2 cloves of garlic pressed
  • 2.5cm piece of ginger peeled and grated
  • ½ cup soy sauce
  • 3 tablespoons fish oil

Method

1. Cut the Lemon grass to make skewers. 

2. Skewer 3 prawns onto each stick.

3. Combine all the marinade ingredients.

4. Place Skewered Prawns into the marinade for ½ hour or more.

5. Cook on the preheated grill for 1-2 minutes per side until the flesh turns white.
