Vietnamese flavoured Scallops

Ingredients

A tasteful twist to the mouth-watering  Australian Scallop.

12 Victorian fresh Scallops

Vegetable oil (about 5 tablespoons)

1 cup Unsalted peanuts

4 Spring onion

1 Lime

Fish sauce (Good quality from Vietnamese supermarket)

1 clove of Garlic chopped.

1 teaspoon of chopped red chilli


Method

Cut spring onion into small pieces in a bowl

Pour hot oil over the spring onions and put aside.

Crush the peanuts in a bowl and put aside.

Fish sauce

1/2 cup of sugar

1/4 cup boiling water

1/4 cup of fish sauce

1/4 cup lime juice

1 clove of garlic, chopped

1 teaspoon of red Chilli, chopped

Place sugar in a bowl, pour boiling water over the sugar to dissolve, add the fish sauce,  lime juice, garlic and Chilli. mix well.

Taste to suit, adding either sugar or lime juice to balance the flavour.

Place the scallop on a pre heated bbq grill, cook for a few minutes until cooked through.

Then, spoon the fish sauce mix over the cooked scallops in the shell and add spring onion and peanuts for the last few seconds to heat through.

Serve whilst hot.
