8 loin lamb chops, cut 2.5cm thick

Salt and pepper to taste

Method

Lamb Chops

Lamb chops are normally cooked on the barbecue, flat on the grill, with the lid on and turned over half way through cooking. If you are feeding a crowd, the lamb chops may be cooked on the barbecue in an upright position, joined together with a skewer (as shown in picture). Make sure you leave enough space between each chop to allow the hot air to circulate. Chops are delicious plain, seasoned with salt and pepper, or smeared with garlic. If desired, they may be marinated with a marinade of your choice before cooking. If the chops are thinner than 2.5cm, the cooking time will be less.
