Chicken Wing Drums

Preparation & Cooking Time: 20-30 minutes
Serves: 6-8


18-20 chicken wings


Salt and pepper to taste

2 teaspoons ground ginger

1 tablespoon brown sugar

3 tablespoons soy sauce

1 tablespoon lemon juice

3 tablespoons sweet sherry

2 tablespoons oil

Tabasco or chilli sauce to taste


Disjoint the chicken wings. Set the wing tips aside for another use. Carefully loosen the flesh around the lower joints of the remaining wing portions. Push the flesh from the loosened end up over the joint so that it resembles a small chicken drumstick. To make the marinade, combine all of the marinade ingredients in a bowl. Place the chicken wing drums in the marinade for about 1 hour, turning them occasionally. Cook them on the barbecue, with the lid on, for 20-30 minutes
