Devils on Horseback

Preparation & Cooking Time: 8-10 minutes
Serves: 6-8

Ingredients

  • 250g pitted prunes
  • 250g bacon rashers

Method

Trim the rind from the bacon and cut the rashers into 5cm lengths. Wrap the prunes in the bacon and secure them with toothpicks. Cook them on the barbecue, with the lid on, for 8-10 minutes. For a change, the prunes may be filled with anchovies, curled around almonds, chopped mango, chutney or stuffed olives.
