Old McGregor's Smoked Lemon Chicken

Preparation & Cooking Time: 60-75 minutes
Serves: 4


  • 1 medium chicken
  • 1 lemon, quartered, rind on
  • 1 tablespoon oil
  • Salt and pepper to taste


Wash the chicken and pat it dry. Place the lemon quarters in the cavity. Tuck the wings behind the back, brush the chicken with oil and season it with salt and pepper. Add 2 hickory chunks to the coals on each side at the commencement of cooking. Cook it on the barbecue, with the lid on, for 60-75 minutes. Served piping hot, this is the best chicken we have ever eaten.
