Korean Kettle Fried Chicken

Ingredients

1.5kgs chicken wings separated into flats & drums

2 eggs lightly beaten

- RUB -

1 teaspoon of ground ginger

½ teaspoon salt

½ teaspoon ground black pepper

- COATING –

1½ cups of plain flour

½ cup corn flour

¼ cup of sesame seeds

1 tablespoon of baking powder

1 tablespoon ground black pepper

1 tablespoon salt

1 tablespoon garlic powder

1 tablespoon ground ginger

- SAUCE –

2 tablespoons of olive oil

4 cloves of fresh minced garlic

1 tablespoon fresh grated ginger

¼ cup of soy sauce

½ cup of honey

1 tablespoon of white vinegar

1 tablespoon of Dijon mustard

1 tablespoon of brown sugar


Method

STEP ONE

Separate flats and drums and then place them into a large bowl and pat them dry with paper towel

STEP TWO

Add ginger, salt and pepper to chicken. Using your hands mix until well blended and all the chicken is coated in the rub

STEP THREE

Add all coating ingredients to a large zip lock bag and give it a good shake to thoroughly combine then place coating mix into a large container

STEP FOUR

To coat your flats & drums, individually dip each one into the egg so that it is all covered and then allow as much of the excess egg to drip off before rolling it in the dry coating mix. One you have rolled the piece in the dry mix give it a gentle shake to remove excess and then place on a wire rack while you do the rest

STEP FIVE

Set up your kettle with your Kettle Kone for indirect cooking, fully light your chosen fuel, allow kettle to get up to temp (350 F+)

STEP SIX

Before putting your chicken on to cook prepare the sauce. Heat the oil in a saucepan directly over the Kettle Kone then add garlic and ginger and cook until fragrant. Add soy sauce, honey, vinegar, mustard and brown sugar. Stir and cook for 2 minutes or until sugar is dissolved. Remove from heat and set aside

STEP SEVEN

Place your chicken in a circle around the outside of your grill. If using a chunk of smoking wood placed directly over the Kettle Kone make sure you rotate the lid a quarter of a turn every 10 minutes to evenly distribute the smoke over the wings. It should take 40 minutes to cook wings. The internal temperature of cooked wings should be a minimum of 165 degrees F

Once chicken is cooked carefully remove from the grill and place in a large bowl. Rewarm the sauce you prepared earlier over the Kettle Kone and then gently pour it over the chicken!
