Whole Grilled Masala Fish

Ingredients
2 Nos Pomfret (600gms)
2 tsp Ajwain Seeds
2 tsp Red Chilli Powder
2 tsp Coriander Powder
20 gms Fresh Ginger Paste
20 gms Fresh Garlic Paste
2 tbsp Lemon Juice
10 ml Refined Oil
1 tsp Turmeric Powder
20 gms Fresh Coriander

Method
1. Cut the pomfret and make sure that its fine scales are scrubbed clean. Trim off the fins and tails using a pair of sharp scissors or knife.
2. Using a sharp knife make 4 lateral slits on each side of the fish, deep enough to almost touch the bone beneath and keep aside.
3. Combine all the other ingredients in a bowl thoroughly.
4. Using your hands or a brush, rub the marinade into the slits of the pomfret so that the marinade goes through and keep refrigerated for an hour.
5. Over a medium heat Weber Q 100 Gas Grill with well-cleaned grates, place the two fish over direct heat. Close the lid and cook for 7-8 minutes on one side. Open lid and gently baste the uncooked side with some oil and flip over. The cooked side should have taken on grill marks and the white flesh from beneath the skin should look cooked. Cover again and cook for a further 8-10 minutes.
6. Check to see if fish is cooked and serve at once with some lemon wedges and fresh coriander.
